Healthy Chocolate Chip Oatmeal Pancakes

CHOCOLATE CHIP OATMEAL PANCAKES




Not your typical carb loaded non filling pancakes!
**no added sugar except the chocolate chips. No butter & can be made vegan/gluten free easily.**

INGREDIENTS:

1 very ripe medium banana
1 teaspoon baking powder
1 large egg
pinch salt
1/2 teaspoon vanilla extract
1 Tablespoon Natural Peanut Butter
1 Tablespoon Coconut Oil
3 Tablespoons 2% milk (or almond milk)
1/2 cup rolled oats (we used vitamix to make oat flour)
1/4 cup whole wheat or unbleached flour (or sub other flour)
3 Tablespoons dark chocolate chips

INSTRUCTIONS:
Preheat a skillet to medium heat or about 300-325 degrees.
Mash the banana with baking powder.
Add egg, oil, salt, vanilla, peanut butter, milk and stir.
Stir in oats and flour until just combined.
Sprinkle in chocolate chips and fold gently.

Scoop 1/4 cup measurements onto lightly greased griddle.
Cook for 2-4 minutes on each side - until golden brown.
Serve plain or with a small drizzle of maple syrup and a few additional chocolate chips for melting. (I loved these with NO syrup at all!)

* Should yield 5-6 small pancakes. * Make gluten free by using gluten-free oats and flour. *

Broccoli Potato Cheese Soup (over Grilled Chicken)






This is so filling & delicious! You're going to LOVE it!!

4-6 grilled chicken breasts
1 small onion, chopped
1 carrot, chopped
1 celery stalk, chopped
2 cloves garlic, minced
1 tbsp butter (I use unsalted)
2 tbsp flour (whole wheat)
2 1/2 cups fat free chicken broth (or vegetable broth)
1 cup fat free milk
2 medium potatoes, peeled and diced small (red skin/yellow potatoes do great!)
salt and fresh pepper
4 cups (about 2 heads) broccoli florets, chopped into small pieces (I get frozen, then thaw in microwave first)
1-3/4-2 cups 2% shredded sharp cheddar

Directions:

Chop onion, carrot, celery, garlic in a chopper or mini food processor.

In a large soup pot, melt butter. Add chopped vegetables and sauté on low heat until soft, about 5 minutes.

Add flour, salt and pepper to the pot and stir until smooth.

Add chicken broth, milk and potatoes and set heat to high until it comes to a boil, then cover and cook on low until potatoes are soft, about 10-15 minutes.

Add broccoli florets and stir well. Adjust salt and pepper to taste. Cook uncovered until broccoli is cooked, about 5 minutes. Add cheddar cheese, stir well and remove from heat.

Serve over chopped grilled chicken. We seasoned with just ground black pepper & some Himalayan Sea Salt.

Whole Wheat Banana Nut Bread

A great in between from the unhealthy & healthy with a great taste! It's even better on the 2nd day!




Ingredients:

2 cups Whole Wheat Flour
3/4 teaspoon Baking Soda
1/2 tsp baking soda
1/2 cup Truvia (baking blend)
1/4 cup unsalted organic butter
2 large eggs
1 1/2 cups mashed bananas (about 3 ripe)
1/3 cup vanilla yogurt (could use plain)
1 teaspoon vanilla extract

1 cup chopped walnuts
cooking spray


Preparation:


Preheat Oven to 350

Combine the flour, baking soda, and salt, stirring with a whisk.

Place sugar and butter in a large bowl, and beat with a mixer at medium speed until well blended (about 1 minute).Add the eggs, 1 at a time, beating well after each addition.Add banana, yogurt, and vanilla; beat until blended.
Add flour mixture; beat at low speed just until moist. Add in chopped walnuts & stir.
Spoon batter into an 8 1/2 x 4 1/2-inch loaf pan coated with cooking spray. Bake at 350° for 1 hour or until a wooden pick inserted in center comes out clean. Cool 10 minutes in pan on a wire rack; remove from pan. Cool completely on wire rack.

Dark Chocolate Snickerdoodle


Yes, you read that correctly. This new recipe is not only delicious, but is full of nutrients that keep you full, satisfied, curb those cravings, and keep you heathy!

I've been drinking these once every day for the last 3.5 years and never felt better! I like to have it as my post-workout meal as it helps refuel my muscles and keeps me from being so sore. 

This Shakeology recipe is so good that I've been having it every day for the past (almost) 3 weeks!
It's the classic Snickerdoodle, but with a spin.

Here's what you need:

10 oz water
1 tsp Natural PB (or PB2)
1 tsp Honey
1/2 tsp Vanilla Extract
a few dashes of Cinnamon
1 tbsp Hershey's Dark Chocolate Cocoa
ice to your consistency 
BLEND & ENJOY

Apple Cinnamon Protein Pancakes

One thing I absolutely Love is breakfast! Literally, I wake up in the morning and the first thing I think of is coffee & checking my meal plan for todays meal of the day. I get pretty excited about it and actually wake up early to make sure I have time to cook & eat before taking my son to school and getting my workout done for the day.

My plan was for some coconut pancakes, but since I don't have coconut flour I decided to sway from the plan a little adding in more protein and less carbs for the meals. With all honestly I love my oat pancakes WAY MORE and this recipe was perfectly balanced and delicious!

Ingredients :
1/4c Oats - old fashioned (I tossed in the vitamix & turned into Oat Flour)
1 whole egg
3-4 egg whites
1 scoop protein powder (I used Cellucor Cinnamon Swirl - you could use vanilla whey or if you're looking to go BIG the Hard Core Base Shake from Beachbody and sprinkle with cinnamon)
1/2 chopped apple

Toss everything into the blender after the oats are in powder form. Blend until mixed.
The batter will be fluffy & light.
Spray your pan with some Olive Oil and cook.

How to Become an Elite Beachbody Coach 2014

How do I qualify to be a 2014 Elite Coach?To qualify for 2014 Elite, you must:
1) Be a paid 5 Star Diamond or higher ON the bonus week ending on December 31, 2014 AND
2) Earn 125 Elite Points AND
3) Advance 2 Personally Sponsored Coaches to a paid rank of Diamond in 2014. Both Coaches must also have a paid rank of Diamond ON bonus week ending December 31, 2014.
How do I earn Elite points?
